The Pasta di Gragnano

n Italy, pasta is a culinary institution. The emblem of transalpine cuisine and the good flavor of the Mediterranean. Lasagna, rigatoni, spaghetti, pizza … Our dough comes from Gragnano, in the region of Campania and is found in all our flagship dishes. The dark flour that composes it holds better heat which allows for baking – and that changes a lot. The texture, the taste, the color … No dough is comparable to that of Gragnano. And hold your ears if the cooking is not al dente!
